My family always celebrated NYE with friends, and I have very fond memories of dressing up, sharing goodies, and toasting the New Year with our closest friends...I'm still quick to jump on their band-wagon if they get together to celebrate :) This year, though, I'm taking a road trip with friends to celebrate with more friends, so it should be fabulous.
Back to this cake, though, I found a recipe on A Bitchin' Kitchen (don't you love it!?) for Sparkling Champagne Cupcakes. When I think NYE, I think champagne, and I do enjoy champagne cake, but I wanted a recipe different than the one I already had. I'll be honest...my cupcakes turned out okay, but I have a few corrections next time I make them:
1. There's no way you're getting 17 cupcakes from this batter. I made 12, but I needed to up my bake time.
2. The buttercream looks delicious, but it's almost too much...I'm not sure what I'd replace it with, but I'd like to cut some of the sugar.
3. This isn't the recipe, but me. I need to up my decorating skills! Tips are welcome.
4. Also unrelated to cupcakes, I think my resolution needs to be learning some new photog skills. Add that to decorating cupcakes.
In case you're like me and you'd never thought of this, borrow that trick for filling a pastry bag! Setting it in a glass makes filling it a breeze, and I don't know why that never occurred to me without seeing it on someone else's recipe.
