This is a recipe I discovered when I had my first apartment & I was figuring out how to cook for one person...that's tough, man! This recipe is so easy, but it's full of flavor, and it's also really versatile. I tossed this in my crockpot as I headed out the door yesterday, and it makes for an easy meal at the end of the day. I also like that while this recipe calls for six chicken breasts, it also really easily makes two.
This is great shredded on sandwiches or tacos, or eaten as a flavorful spin on chicken breasts. I can't take credit for this one, but I sure wish I could, and I wanted to share it with you. I did add whiskey to my crockpot because I wanted this to have plenty of moisture as I left it all day, and I knew that that was a flavor that wouldn't disappoint; I highly recommend it! I've included that in the recipe below. This is a great recipe to throw in the crockpot as you head out to finish up (or start) all those holiday errands!
Zesty BBQ Chicken (crockpot)
1 bottle (about 12 oz.) of your favorite BBQ sauce
1 bottle Italian dressing
1/4 C. brown sugar
2 T. worcestershire sauce
1/3 C. whiskey
Place chicken in crockpot; mix remaining ingredients in a separate bowl. Pour over chicken. Cook on low 6-8 hours, or high 4-6 hours.
*I also usually shred this an hour before its cook time is over, and that allows it to soak up that flavor a little more.
