However, as I picked apart flavors, I settled on this "recipe." It's nothing exact, but it was delicious! Frying the goat cheese added an extra step in the process, and if you want to try that out, I used Ina's recipe from Food Network. Below is the recipe I landed with, minus frying the goat cheese. Enjoy!
3 beets, peeled and diced
2 T. olive oil
kosher salt & pepper, to taste
3 strips bacon, fried and patted dry
1/4 C. walnuts, chopped
1 oz. goat cheese
Drizzle beets with olive oil; sprinkle with salt and pepper. Place in a 400 degree oven for about 20 minutes, or until softening. These will still have a crunch when they're done.
Meanwhile, crumble fried bacon into chopped walnuts; toast in a small frying pan over medium-heat. When beets are done, toss with walnuts and bacon. Top with goat cheese & enjoy!
