Looking ahead to my week, though, I knew I'd need some quick fuel, and I found this trail mix with a mix-in of fresh berries & needed to give it a try. I changed the recipe a little because buying that many raw nuts can get expensive! I lucked out, and Target was running a special on almonds, but I subbed in some pecans I already had instead of buying pistachios. I used corn flakes as my cereal add-in, but next time I'd try cheerios, or something less flaky :)
The only downfall with this is that it's a 300-calorie snack, which I usually avoid. However, it is filling, and nuts are pretty good fats; even without the spicy sauce on this, the nuts provide the calories here. You should give this a try if you're needing a mid-morning pick-me-up!
Blueberry Nut Trail Mix (Gluten-Free)
1/2 C. walnuts, shelled
1/4 C. pecans
1 1/2 T. honey
1 tsp. vegetable oil
1/4 tsp. cayenne pepper
1/4 tsp. cinnamon
1/2 tsp. kosher salt
1 C. cereal
Blueberries (1/4 C. per serving)
Preheat oven to 300 degrees; line baking sheet with parchment. Combine honey, oil, cayenne, and cinnamon; heat in 10-second intervals in microwave until it will pour easily. Pour warm mixture over nuts, mix until all are covered. Pour onto baking sheet. Bake 25 minutes, stirring half-way through.
Stir cereal into hot nuts & let cool. Store in an airtight container up to one week. When serving, add 1/4 C. berries to mix. (If you add berries too early, it gets sticky...words of advice here.)
