However, I had one for breakfast with a cup of coffee this morning, and my tune has changed! They're a great breakfast item, mostly because they're not too sweet. I'm a complicated girl, as you maybe gathered. I'm also really picky about breakfast...I don't do donuts, waffles, pancakes, or other sweet treats, and eggs are slowly creeping into my vocabulary, but I have to be in the right mood.
There's no sugar in these other than what they glean from some honey and a banana. Also, normally by 10am, I'm reaching for snacks. I try to go healthy with a yogurt or some fruit, but I'm snacking, nonetheless. However, I'm still very full from breakfast this morning, and I don't have that morning slug about me. Maybe I've been eating breakfast wrong? I don't think that's it, but these are a great breakfast for those on the go.
Banana Breakfast Bars
1 C. whole wheat flour
2 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. kosher salt
1 1/2 C. milk (I used skim)
1/2 C. unsweetened applesauce
3 T. honey
2 T. peanut butter
1 tsp. vanilla
1/2 large banana, diced
Grease an 8x8 pan and preheat oven to 375.
Mix dry ingredients & set aside. In another bowl, combine milk, honey, peanut butter, applesauce, egg, and vanilla. This is a little lumpy, but try to break up the peanut butter.
Mix wet ingredients into the dry, then fold in the banana. Pour into prepared pan, and bake 35 minutes, or until golden brown. Allow these to fully cool if you plan to freeze them.
To freeze, wrap individually in parchment paper & store in an air-tight container before freezing.
