Growing up, we always packed up our bikes for vacations, and we tried to hit some area trails on Sundays throughout the summer. Having said that, I've never been a serious biker, nor do I aspire to be (as in ride any distance rides), but there's a weekly ride in my area that has always looked fun, and I think I've convinced a friend to join me! So, I decided it's time to actually get my bike out and keep up my end of the deal.
1 C. sugar
1 C. buttermilk (or 1 C. milk + 1 T. vinegar)
2 C. flour
1 tsp. baking soda
Additional cinnamon/sugar: 1/3 C. sugar and 1 tsp. cinnamon
Preheat oven to 350, and line 12 muffin cups with baking liners.
Cream butter and sugar. Add vinegar to milk & allow to sit at least five minutes (it will curdle). To the sugar mixture, add buttermilk and egg; once incorporated, add flour and soda.
Fill each baking cup 1/4 full. Sprinkle cinnamon/sugar over batter. Fill each cup with remaining batter, and sprinkle with sugar once again. Use a knife or toothpick to swirl each muffin. Bake 25 minutes, or until a toothpick comes out clean. Enjoy!
