One thing that is easier about single-girl life, though, is meal-prepping. I know this shouldn't be that difficult, but because Kyle was never in this habit, our meal-prep plans didn't jive well since he got to come home for lunch. This could all change now that that luxury is gone for him, but for now, I'm just relishing in the fact that whatever I prep Monday night is ready for the week, and not "mysteriously" eaten while he's home at noon! I love him anyway.
I've become a huge fan of eatyourselfskinny, because she has great, healthy recipes, but like me, she hasn't given up on cheese and flavor. Life is too short. This recipe is hers, not mine, and I followed most of her directions. I eliminated the skewers, because it doesn't add much, so prepping for me alone, it wasn't necessary. However, I would also skip her Sriracha marinade next time...maybe if I'd had more time it would've soaked up more flavor, but I didn't find that it added much, and the mango salsa is such a fresh, full flavor that I think it overpowered any work the marinade had done. You can check her link for the marinade, but below is the mango salsa, and it was phenomenal on grilled chicken! I'm thinking this would go alongside a Corona for a great Cinco de Mayo supper! It also came together quickly, and as someone who has ZERO access to fresh mangoes, let me tell you it was just fine with the frozen version.
1 ½ C. mango, chopped
2 jalapenos, seeded and diced
¼ C. red onion, chopped
¼ C. green onion, chopped
½ C. cilantro, chopped
1 red or orange bell pepper, seeded and chopped
Juice of 1 lime
1 tsp. lime zest
Kosher salt & pepper, to taste
Chop all components and stir together. This is best if it’s allowed to sit before serving. Serve alongside shrimp, grilled chicken, or a basket of chips!
