These roasted tomatoes are a Martha Stewart recipe my mom tried out long ago - think back to when Martha was the rage & had her own show - like pre-jail - (can you do that twice in a sentence?)...I'll check a teacher's manual when I'm at school. Anyway! This recipe is one we've had around for a while, and we love to add these roasted tomatoes to angel hair for a great summer meal. However, I'm sure they make a divine bruschetta as well. Any way you eat 'em, they're just plain 'ol delish.
Martha's Roasted Tomatoes
4 cloves garlic
1 tsp. kosher salt Fresh-ground black pepper
Line a baking sheet with parchment paper.
Slice tomatoes into thin slices; layer on parchment. Sprinkle olive oil, salt and pepper over tomatoes. Once thyme is rinsed, take it off the stems and sprinkle it over tomatoes. Smash garlic cloves, and add to the pan.
Roast at 325 degrees for 90 minutes. These are great chopped up & tossed with angel hair pasta!
