Because she and her roommate had gotten all the groceries, I volunteered to bring a salad, and I wanted an Asian-inspired flavor. I called my sister, who was still at work, and she went to work finding a ginger vinaigrette. I can't take credit for this, but I had to share because it was delicious! I always toss a salad with a couple kinds of greens, a dried fruit or fruit for texture, something with a crunch, and some form of onion for a bite. 1/4 C. vegetable oil
1 1/2 T. sugar
1 tsp. fresh-grated ginger
Kosher salt & black pepper, to taste
Emulsify ingredients by shaking in a tightly-sealed jar. Store in refrigerator.
