I found a new take on it as I set out to find the recipe, though. As I typed in "cabbage," the word "dijon" popped up, and my mouth started to water. I love mustard, and instead of reading further (like a normal person), I ran to my kitchen to whip up my own version.
This was super tasty, and since I started with about a quarter of my cabbage Tuesday, I whipped up another round last night. An always-added bonus is that neither mustard nor cabbage has many calories! Give this a try!
Dijon Roasted Cabbage
2 T. olive oil
1 T. Dijon mustard
1 clove garlic, minced
salt & pepper, to taste
Let me clarify...I used the "sauce" recipe above for about 1/4 of a cabbage. Plan accordingly :)
Preheat oven to 400.Lightly grease a baking sheet, or brush with olive oil.
Slice cabbage into 1/2" slices; place cabbage on baking sheet. Whisk together garlic, olive oil, and mustard; brush on cabbage. Sprinkle cabbage with salt and pepper.
Bake about 20 minutes, or until cabbage begins to brown.
