You can imagine my excitement when I saw this on Pinterest (surprise, surprise) on National Chocolate Cake Day, no less! Whoo! Okay, sidebar, when did all these "national holidays" start popping up? But who am I to question national cake holidays - let's forget we talked about it. Now, I shouldn't be of the mind-set that I "deserve" treats, but yesterday warranted it, my friends. I subbed kindergarten for half a day, and it was great. Truly! They were so cute. However, one of them puked into the recycling bin as I held it out and handed him paper towels, and as a result, I drove straight to the pharmacy for my flu shot. I know, I know...that's not THE flu we're vaccinating against, but that's what it took to get me there. That brings me to this point: I hate shots. In fact, I was bribed with Barbies a couple times to sit through shots without crying. We're not talking about what age that ended...mmhm. Anyway, I was ready to eat some cake, folks!
This brings me back to my original point. I was super excited to see a recipe already pared down to make just two cupcakes! I can handle two! I have to admit, I have other recipes I like better for two reasons:
1. The cake is a little dense.
2. The frosting is a little too much work for two cupcakes, but on that note, it also makes too much, so you could just pare down your own go-to.
I would still make them again! Sometimes you just need one! (Recipe below.)

Cupcakes for 2
2 1/2 T. sugar
1 T. cocoa
1/4 tsp. baking soda
2 T. milk
2 T. oil
1/4 tsp. vanilla
Mix dry ingredients. Add wet ingredients & mix. Pour into 2 muffin liners. Bake 325 for 18 minutes (I'd up this to 20).
Frosting for 2 Cupcakes
1/4 C. milk
2 T. sugar
1 tsp. corn syrup (I forgot this, and it was fine without)
1/2 C. chocolate chips
1/2 C. powdered sugar
Melt butter, sugar and milk over medium high heat to a low boil to dissolve sugar. Pour hot mixture over chocolate chips; let melt & whisk together. Cool chocolate mixture in refrigerator 10 minutes. With a mixture beat chocolate and powdered sugar until fluffy & frost!
