I anticipated my day would be longer than it was, so I got the luxury of coming home and painting my nails, folding a little laundry, and curling up with a book on my couch. I could always apply for more jobs, but I'm in an okay spot where it's concerned (this week at least!), so I felt like it was okay to relax for the night! There's always time for applications, and I've spent the last two weeks hitting the applications hard!
Since I'd gotten up and run with morning energy, I had a few calories to spare, too. There's nothing I love more than a brownie, so I set out to find a recipe I could pare down. I came across this one (it makes 6 brownies), and they were super tasty! Bonus: you make them in a small loaf pan, so they all have edges. No need for weird silicon pans here.
Now I have to get out of bed and run so I can enjoy a left-over after today's interview fair! :)
1/2 C. + 2 T. sugar
1/4 C. cocoa powder
1/2 tsp. vanilla
1 tsp. water
3 T. flour
2 T. chocolate chips
Preheat oven to 350 and spray a small loaf pan.
Melt butter in a saucepan; remove from heat and stir in sugar, cocoa, vanilla, and water. Set aside for 5 minutes to cool.
After some cooling time, mix in egg and flour. Once smooth, stir in chocolate chips. Pour into pan. Bake 18-20 minutes.
