This is a recipe my mom discovered from the Barefoot Contessa years ago. You see, growing up on a farm, we didn't have more than 10 channels, give or take, until I was in high school. The only thing prompting my dad to go for more channels was the fact that he missed the national anthem on a college game once...now, my dad isn't super into sports, or he would've realized they don't usually show that :) However, my sister was singing the anthem at this particular game, and he vowed to never miss another chance at catching it.
This worked out really nicely for those of us interested in Food Network, Bravo, and other TV addictions. My dad still primarily watches the news...and a little Duck Dynasty. Back to food, though (as always), our house went through a phase of not changing the channel from Food Network unless the local meteorologist was talking. We tried lots of new food for a few months there! This is one my mom & I saw one day, though, and it's such a quick and easy go-to dessert. We threw it together when we had a last-minute Mother's Day lunch with my grandparents. Forgive me for forgetting to snap a picture until we were half-way through. Good thing my dad is a slow eater. This is great all year, but especially in the summer when a cool, light dessert is perfect for any get-together.
Berries with Hot White Chocolate
1 C. blackberries
1 C. raspberries
1 C. blueberries
(You can vary the combo here, depending on what works for you.)
Wash & freeze berries in a single layer. I also would take these out of the freezer 10-15 minutes before you serve them.
8 oz. white baker's chocolate
1 C. whipping cream
1 tsp. vanilla
Over a double-boiler, heat chocolate until it's melted. Slowly stir in cream and vanilla; whisk until smooth. In serving glasses (martini, sherbet, soup bowls...take your pick), spoon hot chocolate over frozen berries. Serves 6
