Anyway, I left this in my inbox so I'd remember to try it, and after staring at the email for far too many weeks, I gave it a go! It was worth the painful email experience. I deviated from the recipe and used chicken breasts instead of drumsticks, but I threw this in its marinade before I headed to the school for the day. I also took my sister's recommendation and pounded the chicken breasts so they'd grill more evenly. I'm glad these weren't in the marinade for more than eight hours, because you could tell they'd begun to change color from the acid in the marinade, but they were so tasty, and all my sister's rave reviews were right!
1 tsp. onion salt (I used garlic salt because it's what I had on hand)
1 tsp. paprika
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1/2 tsp. black pepper
3 cloves garlic, minced
1/2 lime, juiced
1 C. beer (I just used a whole can...I couldn't drink the rest at 8 AM!)
Salt, to taste
Fresh chopped parsley
Whisk together, and pour over chicken to marinade at least 3 hours before grilling.
