I was really excited when I found this fresher, healthier version of two of my favorite foods: salmon and gyros. I came across this on Pinterest (shocking, I know), and I've kept it in the back of my mind, trying to remember to actually try this one! After too much pizza and cookies the other day, I tried my darndest to run off the calories I could, but I was looking for a quick, healthy dinner.
These really only took me about 20 minutes to whip up, and I've been eating the leftovers all week without complaint :)
2 T. olive oil
kosher salt & pepper
2 C. baby spinach
4 half-size pita pockets
2 C. greek yogurt
1 cucmber, peeled and diced (or grated)
1 C. feta cheese (I only used about 5 oz. with no disappointment!)
1/4 tsp. garlic powder
1/4 tsp. black pepper
1/4 tsp. kosher salt
1/2 tsp. Greek seasoning
Make sauce ahead of time so flavors have time to get acquainted :) Mix all ingredients before refrigerating; I peeled and took the seeds out of my cucumber to keep the water content down.
Turn oven to broil. Line a baking sheet with parchment paper. Place salmon on parchment; brush with olive oil and sprinkle with salt and pepper. Broil salmon about 5 minutes on each side, or until it's pink and flaky. Flake salmon.
To assemble: fill pocket with a handful of spinach, top with salmon & sauce. Enjoy! Serves 4.
