I researched ice cream sauce recipes, and threw out any I found! Instead, I coupled a few favorite flavors with what I know about strawberry pie filing & went to town! This was delicious over vanilla bean frozen yogurt, and it made the perfect amount to keep on hand this spring as I'm dreaming of summer flavors...and weather! Enjoy :)
Strawberry Ice Cream Sauce
1 C. sugar
1/3 C. fresh orange juice
1 tsp. vanilla
2 T. corn starch
3 T. water
Bring berries, sugar, juice, and vanilla to a boil; boil and stir 5 minutes. Remove from heat, and using an immersion blender, pulse until berries break up a bit. Return to medium-heat; whisk together corn starch and water, and whisk into strawberry sauce. Continue string until thick.
Remove from heat & allow to cool before serving. Store this in a jar up to two weeks to be enjoyed on ice cream or waffles!
