Okay. No, that didn't happen. I was even in my classroom after I tried to promise myself I wouldn't go this week, but deep down I'm excited! However, when I got home I did make a bee-line for the pool, and I made some yummy summer food last night. I'll have a chicken marinade to share later, but I wanted to share the divine treasure that is grilled peaches. It's no secret that I'd eat ice cream for any meal, and I added these peaches to last night's ice cream, making it to die for. Exquisite. Super tasty. I think you get it.
- I rubbed down the grill with some olive oil to keep the sweet peaches from sticking. I just sliced them in half and removed the pits.
- Once my grill was hot and I'd oiled it, I placed the peaches flesh down on a medium-heat grill.
- I left them about four minutes, then I flipped them over, and I sprinkled about a teaspoon of brown sugar in each pit.
- I left them another two minutes, then served them with vanilla ice cream.
